To be honest with you, I’m not confident how I like granola best. I mean, I LOVE granola. It’s honestly one of those foods that tastes like breakfast, dessert and an unhealthy snack all in one. Is that even possible? The options with granola are endless. It tastes amazing alone, but if you want to make it taste even better, add some almond milk to it, or throw it on top of your favorite ice cream, or as a topping on your daily protein shake. You can add it to Greek yogurt, to fruit, to a warm piece of peanut butter toast….I could honestly go on for hours, but I’ll stop while I’m ahead.
I first fell in love with granola back when my Mom used to buy us Nature Valley bars. Do they still make those? Probably, right? Anyways, I always loved them because I thought they tasted like a cookie, which honestly will make any kid fall in love with a snack. I specifically remember the peanut butter flavor because they always had a peanut butter drizzle on the top. The more peanut butter the better. Who’s with me?!
When I was making this granola I wanted to replicate the flavor of that Nature Valley Bar that I remember as a kid, but I wanted a healthier version of course. This granola has the perfect amount of almond butter to give you that subtle almond butter flavor and is loaded with only the good stuff! This recipes makes enough granola to last you 1-2 weeks depending on how often you would like to indulge! It’s perfect for a healthy breakfast that will give you brain power for the day, or on top of your afternoon shake to help give you a boost to get you through the remainder of the afternoon. There is no wrong time to enjoy it and that’s the way I like it!
What You’ll Need:
2 1/3 cup organic quick oats
½ cup crunchy almond butter
¼ coconut sugar
¼ cup maple syrup
¼ shredded coconut flakes
2 tbsp. chia seeds
½ tsp. pure vanilla extract
2 tbsp. coconut oil
dash cinnamon
1/3 cup dark chocolate chips
Directions:
Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
In a large bowl, combine oats, almond butter, coconut sugar, maple syrup, chia seeds, vanilla, coconut oil and cinnamon. Mix well until fully combined.
Add the granola to the baking sheet and press down so everything is stuck together and in one layer.
Bake for 20-22 minutes.
Allow the granola to cool for about 10 minutes and then add in your chocolate chips. Begin to break apart into small pieces and store in an airtight container. ENJOY!
