Bacon Jalapeño Meatballs

HOLY BALLS! These bacon jalapeno meatballs are the real deal. So much flavor in such a tiny bite-size ball. I looove jalapeños and let's be honest, bacon makes everything better, so this is an award winning combo and makes a usually "simple" dish, taste not so simple!



Will loves those classic "simple" dinners! He's always asking for spaghetti and meatballs, meatloaf, American chopped suey, Shepard's Pie, but to honest with you, they're not really my kind of meal. While there is nothing wrong with them, I prefer dishes with a little more spunk and that is exactly what these meatballs bring to your plate! Just enough spice and salt to light up that smile and leave you drooling for more!





There really is no right or wrong way to make these. They can be made with ground beef, ground turkey, ground chicken, regular bacon, turkey bacon - whatever you want! Same things goes for eating them. You can put them on top of zoodles with olive oil and garlic, brown rice pasta with a traditional red sauce, or have them as leftovers the next day on top of a salad. You can't go wrong! I've had them about every single way and there was not a single night that I wished I had done it differently! So grab whatever you have in your fridge or pick your favorite and let's get cooking!



What You'll Need:

- 1 package of ground chicken, turkey, or beef (these meatballs shown are made with ground chicken)

- 1 package of bacon, cooked

- 1 medium-large jalapeño, chopped

- 1 small onion, diced

- 5 large celery stalks, diced

- 1 egg

- 1/3 cup breadcrumbs (I use Alexia gluten-free Italian)

- 1/2 tsp Himalayan pink salt

- 1/2 tsp black pepper

- 1 tsp garlic powder

- 1/2 tsp smoked paprika


Directions:

1. Preheat the oven to 350 degrees. Line baking sheet with parchment paper.


2. Cut the cooked bacon into small pieces. Place chopped bacon into a food processor and grind until finely chopped. Set aside.


3. Repeat step two with your jalapeño. I recommend removing the seeds.


4. In a large bowl, combine ground chicken, bacon, jalapeño, onion, celery, egg, breadcrumbs, salt, pepper, garlic and smoked paprika. Mix well until fully combined.


5. Using your hands, form the mixture into gulf ball sized meatballs and place on baking sheet.


6. Bake for 30 minutes. Top on whatever you choose and ENJOY!
