I love making Will and I a big breakfast on Sundays. it’s an epic start to a rainy lazy Sunday. kind of makes me want to stay in my pjs all day and turn on Nickelodeon 😝 jk but not really. but in all seriousness, pancakes are just a feel good comfort food and homemade truly are the best!
this recipe only makes one serving but double as necessary!

WHAT YOU NEED:
(makes a single serving - double as necessary)
+ 1/4 cup oat flour
+ 2 tbsp quick organic oats
+ 1/4 tsp baking powder
+ 1/4 tsp vanilla
+ 1/2 banana, smashed
+ 1 egg white
+ 2 tbsp almond milk
+ 2 tbsp dark chocolate chips (optional)
+ 1 tbsp coconut oil for pan

HOW TO:
In a small bowl mash 1/2 banana using a fork. Add egg white, vanilla, and milk and mix well. Then add in flour, oats, and baking powder and mix until fully combined.
Heat coconut oil in a pan over medium heat. Once warm, form 3 pancakes in the pan. If adding chocolate chips, place a few in the middle of each pancake. Let cook for about 3-4 minutes on each side. Top with extra sliced bananas and warm maple syrup and ENJOY!
