Lazy girl’s guide to ✨BUFFALO CAULIFLOWER FRIED RICE✨ Ugh, I had myself at buffalo 😋 Anything buffalo style I’m all about 💯Add the word “buffalo” in front of wings, tenders, chicken salad, dipping sauce, mac n cheese, quesadilla, and I’m reaching for it 🙋🏼♀️ I’ve always been a girl who loves spicy food & that’s never going to change!
Most of you guys probably know but now that I live a super busy life. I’m constantly moving & racing to where I’m supposed to be next and I love it that way 💕 but that also means fast, quick, lazy style meals SAVE me from time to time! There just aren’t enough hours in a day to do it all, so make your life a little easier this week and whip up this mindless, 15 minute dinner!
Seriously girl, pull the leftover chicken from last night out of the fridge, toss it into a saute pan filled with easy veggies, throw in that sauce, pour a glass of wine 🍷 , and sit your booty on the couch 🛋 & enjoy your life!😘
WHAT YOU NEED for FRIED RICE (makes about 4 servings):
▫️1 package of frozen cauliflower rice
▫️1 tbsp avocado oil
▫️1 small onion, chopped
▫️1 small bell pepper, chopped
▫️2 garlic cloves, minced
▫️2 eggs
▫️2 tbsp coconut aminos
▫️3 tbsp buffalo sauce (I love New Primal Mild)
▫️protein of choice (chicken or shrimp)

WHAT YOU NEED for BUFFALO CHICKEN:
▫️1.5 lbs organic chicken
▫️2 tbsp tapioca flour
▫️2 tbsp buffalo sauce
▫️1 tsp garlic powder & pepper

HOW TO make CHICKEN:
Cut chicken into small bite size pieces. Toss in tapioca flour, buffalo sauce, and spices. Set aside.
Heat 2 tbsp of avocado oil in a medium sauce pan over medium heat. Add chicken to pan and cook for about 3-5 minutes on each side.
Next, follow instructions below to add in the fried rice.

HOW TO make FRIED RICE:
Heat avocado oil in a saute pan over medium high heat (skip this step if you made the chicken above). Once warm, add garlic and onion and let cook for 3-5 minutes. Add in cauliflower rice and bell pepper and let cook for another 5-7 minutes.
Once veggies are cooked, reduce to a simmer and add coconut aminos and hot sauce. Let simmer for 3-5 minutes.
Next, crack both eggs into your pan and scramble. Add any leftover protein of choice you have in the fridge! (if you didn’t make the chicken above). Chicken and shrimp are my favorite for this meal! ENJOY!
