Buffalo Chicken Quesadilla

it’s the buffalo sauce for me. it’s the cheese for me. it’s the crunch for me. wait. no. it’s the WHOLE damn thing for me ✨BUFFALO CHICKEN QUESADILLAS✨ if there was one perfect bite, this might be it. cheesey, spicy, crunchy, just so 👏🏻 satisfying 👏🏻 they say a picture is worth 1,000 words yet these pictures leave me speechless bc I’m in awe over quesadillas every single time I eat them 😶 my friend texted me yesterday saying she was making a quesadilla & that was all I needed to hear to run into the kitchen and make myself another one! now it’s your turn! let’s end the weekend with a bang! 💥

WHAT YOU NEED for QUESADILLAS

(makes 2 quesadillas)

▫️4 siete almond flour tortillas

▫️1 cup pulled buffalo chicken

▫️1/2 cup goat cheddar cheese, shredded

▫️1/2 cup goat mozzarella cheese, shredded

▫️1/4 cup red onion, sliced

▫️2 cups spinach, chopped

▫️1/2 avocado, sliced

▫️dipping sauce of choice (it’s the ranch for me)

▫️coconut oil spray for pan

WHAT YOU NEED for PULLED BUFFALO CHICKEN:

▫️2 cups bone broth, unsalted

▫️1.5 pounds organic chicken breast

▫️1 small onion, chopped

▫️2 large celery sticks, chopped

▫️2 garlic cloves

▫️1/3 - 1/2 cup mild buffalo sauce (mix after chicken is cooked)

HOW TO:

  1. Turn your crockpot on low (for 8 hours) or high (for 4-5 hours). You can always also let this simmer on the stove all day if you don’t have a crockpot. Pour in 2 cups of pacific foods unsalted bone broth, onion, celery, garlic, and chicken and let simmer in pot for 4-8 hours depending on if you select low or high.

  2. Remove chicken from crockpot and pull apart using two forks. Toss in buffalo sauce and set aside.

  3. To make two quesadillas, lay two tortillas on a clean surface. Layer each tortilla with 1/4 cup mozzarella, 1 cup chopped spinach (this will wilt down when cooking), 2 tbsp chopped onion, 1/2 cup pulled buffalo chicken, 1/4 sliced avocado, then 1/4 cup cheddar cheese, and top with another tortilla. NOTE: you want cheese on each side of the tortilla to help it stick together!

  4. Heat medium sauté pan over medium heat. Spray with coconut oil, pam, or any oil of choice. Once warm, gently place quesadilla in pan. I use a small plate to apply pressure to quesadilla to help it form. Let cook for about 5 minutes on each side, or until golden brown. Slice into 4’s and serve with your choice of dipping sauce. ENJOY!
