I always say that Tuesday’s are one of my favorite days of the week for the sole fact that they are statistically proven to be the most productive 📝 day of the week - IYKYK 😂 (i say this allllllll the time it’s almost annoying 😜) - but I kind of think “Taco 🌮 Tuesday” also deserves a lot of the credit for why I don’t find Tuesday’s to be that bad….for ex. reasons like this ✨CAULIFLOWER RICE BAKED BURRITO✨ to be clear, it doesn’t need to be a taco Tuesday for you to indulge in this bad boy 🌯 any day of the week will be just fine! the first time i ever made these we ended up eating them for dinner every single night of the week because we were obsessed. they’re that good!
so simple, yet so delicious. simple is best 💯 you don’t need a lot to make you happy. just the core ingredients! (this is true inside + outside of the kitchen hehe) the core ingredient to a burrito is rice in a wrap. but who says you can’t sub out that rice with cauliflower rice?! then add all my favorite toppings: avocado 🥑 , jalapeños 🌶 , cilantro 🌿 , and my taste buds are happy AF 🥰 don’t skip over this one - another favorite made guilt free!
WHAT YOU NEED:
(make 4-6 burritos)
+ 1 lb. ground organic turkey
+ 1 onion, chopped
+ 2 garlic cloves, minced
+ 1 tbsp avocado oil
+ salt, pepper, garlic powder to taste
+ 1 package siete spicy taco seasoning
+ 1 can organic corn, drained
+ 1 can organic unsalted black beans, drained
+ 1 bag cauliflower rice
+ 1 package siete burrito wraps (6 wraps come in 1 package)

ADDITIONAL BURRITO FILLINGS:
(all optional)
+ manchengo cheese, shredded
+ spinach
+ avocado
+ kite hill plain yogurt “sour cream”
+ cilantro
+ rice (Will likes additional rice in his)

HOW TO:
In a medium saute pan, warm avocado oil over medium heat. Add minced garlic and chopped onion and let cook for about 3 minutes. Next add turkey meat, salt, pepper, and garlic to taste. Use a spatula to break up the turkey meat and let cook for about 7 minutes, or until all pink is gone.
Once turkey is cooked, follow the directions on the back of the seite seasoning package. It will tell you to mix the seasoning with water. Once mixed, add sauce to pan and mix into turkey meat. Add cauliflower rice, corn, and black beans. Mix all together. Let simmer on low for about 10-15 minutes so that the flavors can come together and cauliflower rice can cook.
While the burrito filling is on low, preheat the oven to 350 degrees. Warm your burrito wraps so that they are easier to wrap! (I usually just put them in the oven for a minute or two!) Once warmed, add a layer of cheese, spinach, extra rice if you desire (I don’t think it needs it but Will loves extra rice!), and then add a big scoop of your turkey burrito filling! Fold both end sides on the the wrap in and roll burrito up! Top with a little extra cheese and bake for 20-25 minutes.
Remove from oven and top with sour cream, salsa, avocado, sliced jalapeños, cilantro, and ENJOY!
