When I was younger one of my favorite dinners my mom made was her chicken and broccoli casserole. She made so many good dinners it’s hard to pick favorites but this was always on top of my list! There’s something about a warm casserole that is just mouthwatering 🤤 So needless to say, when I figured out a clean recipe for it I was in heaven! Healthy comfort food?! I mean COME ON. This recipe is easy, healthy, guilt-free & leaves you with plenty of leftovers, which lets be honest - is a huge bonus! Looks like a lot of steps, but only takes about 30 mins of prep!

What You Need:
2 heads of organic broccoli, cut into florets
3 organic chicken breast, cut up into cube like pieces
3 tbsp of grass fed butter
1 block on manchengo cheese (you can sub for any cheese - I like to use this sheep base cheese because it’s easier on your digestive system and has twice as much vitamin c and other essential vitamins)
1 3/4 cup unsweetened almond milk (can sub for any non dairy milk)
1/3 cup oat flour + 3 tbsp
Himalayan pink salt, pepper, garlic powder, onion powder & smoked paprika to taste
2 tbsp olive oil
4 garlic cloves, chopped finely
1/2 cup gluten free Italian breadcrumbs

Directions:
In a small bowl, combine 3 tbsp of oat flour & spices to taste. Mix to combine.
In a medium bowl, coat your chicken with the flour/spice mixture. Mix until lightly covered.
In a medium sauté pan, pour olive oil & 3 chopped garlic gloves on medium heat. Once warm, place chicken in pan. Let cook for about 10 minutes, flipping chicken when necessary.
Meanwhile, in a small sauce pan, melt 2 tbsp of butter. Keep your eye on this so it doesn’t burn! Once melted, add 1/3 cup of oat flour. Mix continuously until it becomes thicker consistency. Add 1 cup of almond milk. Keep stirring. This will start to thicken. Add in extra garlic/pepper. Once thickened, start to add in your cheese, and then the other 3/4 cup of milk. Keep stirring and you will see a cheese like sauce start to form.
In a 9x12 glass pan, put down half your broccoli & half your chicken. Top with half your cheese sauce. Repeat this again.
Next, take 1 tbsp of butter and put in microwave for 30 seconds. Once melted, add in your breadcrumbs. Mix with a fork and top off your casserole.
Add a little extra cheese on top and put in the oven at 350 for 30 mins!
Optional - Place the casserole on top of a little brown rice! My favorite way ☺️
