Chive Salmon Salad Toasted Roll Ups

There’s a new lunch in town and I’m all about it ✨CHIVE SALMON SALAD TOASTED ROLL UPS✨ Lunch can get so boring sometimes 🤦🏼‍♀️ I feel like it’s the meal that tends to always be the same. Turkey sandwich. PB&J. Salad. Lame✔️lame✔️lame✔️ I want something with some spunk! Something untraditional. & that’s exactly what this is! Usually you see tuna salad, never a salmon salad. And 9 times out of 10 its mixed with mayo, but today we’re mixing with dairy free chive cream cheese 🤩This is the switch up you need in your life right now!

Gluten free, dairy free, paleo, these are perfect for your healthy lifestyle! 💯 These really might be my new favorite lunch right now!👏🏻 You could even make these for your next Taco Tuesday to switch it up a little bit! They definitely give off that Mexican Food vibe, which we all know is my favorite!! Just can’t get enough! 🙃

WHAT YOU NEED:

(makes 2 servings)

▫️1 can wild Alaskan salmon, cooked

▫️2 tbsp kite hill dairy free chive cream cheese

▫️1/4 cup onion, diced

▫️1 tsp garlic powder

▫️1 tsp onion powder

▫️1/2 tsp black pepper

▫️1/4 tsp pink himalayan salt

▫️4 siete tortillas

▫️1 tbsp avocado oil

▫️1/2 cup spinach, chopped

TOPPINGS: cilantro, avocado, jalapeños, salsa (all optional)

HOW TO:

  1. In a medium bowl, mix together salmon, cream cheese, onion and spices using a fork. (Should resemble the consistency of a tuna salad).

  2. Lay out your tortillas and top each with spinach and 1/4 of the salmon salad on each tortilla. Gently roll each tortilla into a tight “roll up.”

  3. Next, warm your avocado oil in a sauté pan over medium heat. Place the roll ups in the pan and let cook for about 3-4 minutes on each side, or until golden brown. NOTE: I like to place a small plate on top of the tortillas while cooking to help hold the shape and apply some pressure. Serve with water toppings you so choose and enjoy!
