Chocolate Drizzle No Bake Granola Bars

I love me some snacks, but to be honest I’m not a huge snacker…I feel like I just contradicted myself haha. Let me try this again: I love snacks when I have something delicious and worth snacking on. I don’t really like snacking on chips or anything in that category, but anything with a little chocolate drizzled on top I’m all over! So it should come as no surprise that my Chocolate Drizzle No Bake Granola Bars are on the top of my snacking list. Made from oats, bananas, peanut butter, maple syrup and a few other goodies, these no bake granola bars are the perfect after dinner snack, pre-gym snack, mid-morning snack, or just the good ole “I feel like a snack” snack….which let’s be real, are the best kind!

Summer has been in full force lately and it has been HOT! When the humidity is up like it’s been the last thing I want to do is turn on my oven. That is one of the many reasons I love these granola bars so much. They can be made in less than 5 minutes (minus fridge time) and are mindless, yet filled with so many nutritious ingredients that will help fuel your body throughout your day and keep your energy up.

Another reason I love these granola bars is because they actually remind me a little bit of the Quaker Chewy Bars. Do you guys remember those?! I think I just took a time machine back to my childhood for a hot second – woah. I used to have those all the time growing up! I also remember seeing them in all my friend’s pantries and in all my peers lunch boxes at school. They were a popular snack! There was one flavor that had chocolate drizzled over the top and another one that was completely dipped in chocolate. (Those two were obviously my favorite…duh). My version is a whole lot cleaner and way more nutrient dense. Aside from the 2 tbsp. of coconut sugar (which you could omit) the only sugar in these delicious snack attack bars is from the natural maple syrup and the natural sugar from the single banana. No additional sugar and totally flourless! All natural baby – just the way I like it.

If you’re anything like me and always on the go, then these are the perfect bars for you. Make them in the beginning of the week and store in the fridge to have on hand all week long. There is nothing worse than being hungry and looking for a healthy snack in your house but having nothing to grab. You know you’re going to need a snack at some point this week, so why not stock up?! These bars are gluten-free, dairy-free, flourless, paleo, vegan, guilt-free and totally kid-friendly! Made for all ages and every time of day, you’re not going to want to miss out on this one!


What You’ll Need:

  • 2 ¼ cup organic oats

  • ¼ tsp. cinnamon

  • 2 tbsp. chia seeds

  • 3 tbsp. shredded coconut

  • 2 tbsp. coconut sugar

  • ¼ cup crunchy peanut butter

  • ¼ cup pure maple syrup

  • 1 ripe banana, mashed

  • 1/3 cup dark Hu Chocolate chunks

  • 1 tbsp. crunch peanut butter

  • 1 tbsp. coconut oil

Directions:

  1. Line an 8x8 glass pan with parchment paper.

  2. In a large bowl, combine oats, cinnamon, chia seeds, coconut sugar, and shredded coconut and mix well.

  3. In a separate bowl, whisk together crunchy peanut butter, maple syrup, and mashed banana. Pour mixture into dry ingredients and mix well.

  4. Next, using a spatula, firmly press the granola bar base into the 8x8 pan until evenly spread. Place in the fridge for at least an hour.

  5. Meanwhile in a small saucepan, melt together chocolate chunks, 1 tbsp. crunchy peanut butter and coconut oil. Remove bar base from the fridge and drizzle with the melted chocolate mixture. Sprinkle with a little extra peanut butter and place back in the fridge for another hour before slicing. Store in the fridge for up to a week and ENJOY!
