Chocolate PB Banana Quesadilla

You know those days when your sweet tooth is just out of control? Or the days that you just want to eat all the carbs in the world? I mean, to be honest, that kinda sounds like a normal day for me! BUT, when I am feeling that way this is a definite go to! These quesadillas are made with my favorite Siete Almond Flour tortillas, a little PB, a little banana and a little chocolate and a lot of YUM.



There is no better ingredient than peanut butter. It gets along with everything, it works well alone, it makes everything better, it's just pure perfection. There are also no better combos than PB and chocolate, PB and banana, and banana and chocolate, so why not put all three together?!




The next time you're feeling sick of your standard PB&J I recommend giving this a try! Not only is it super quick, has less than 5 ingredients, can be a breakfast, lunch, or dessert, but it is also kid friendly and will leave you feeling like a little bit of a kid yourself!






What You'll Need:

Makes 1 quesdilla


- 2 Siete Almond Flour Tortillas

- 2 tbsp. natural creamy peanut butter

- 1/2 banana, sliced

- 1/2 tbsp. dark chocolate chips (I use the Enjoy Life brand - dairy, nut & soy free)

- 1/2 tbsp. coconut oil (for the pan - the coconut oil creates a nice crunch for the tortillas)


Directions:

1. Place the coconut oil in a pan over medium heat.

2. While the coconut oil is warming, spread 1 tbsp. of peanut butter on each of the tortillas. Add your sliced banana and chocolate chips on only one tortilla. Place the other tortilla on top to close it.

3. Once the pan is warm, drop your quesadilla in the oil and let it cook for about 5 minutes on each side, flipping when necessary, or until golden brown.

4. Once gold brown, remove from pan and slice into 4 sections. Feel free to drizzle a little extra PB and any leftover banana or chocolate chips you have laying around. ENJOY!
