I’m a sucker for anything chocolate 🍫 and everything peanut butter 🥜 so these might just be the best thing to happen to me all week! 👏🏻

these little goodies are a perfect treat to make for Easter coming up, or just to sweeten up your week! made with only 6 ingredients you might already have everything you need in your pantry! there is a little bit of “wait” time on these (cooling needs really) but so worth the wait! however, don’t wait to make them though 🙃

WHAT YOU NEED for PRETZEL BALLS:
(makes 15-18 balls)
▫️1/2 chip hu kitchen dark chocolate gems
▫️1/2 cup woodstock foods creamy peanut butter
▫️1 tbsp coconut oil
▫️1 cup almond flour
▫️2 tbsp coconut flour
▫️3/4 cup pretzels, chopped

WHAT YOU NEED FOR COVERING:
▫️3/4 cup hu kitchen dark chocolate gems
▫️1/2 tbsp coconut oil
▫️2 tbsp creamy peanut butter for drizzle

HOW TO:
Line a baking sheet with parchment paper and set aside.
In a small sauce pan, over medium heat, melt together chocolate gems, peanut butter, and coconut oil. Stir frequently. NOTE: Make sure to watch this so it doesn’t burn. Will only take a few minutes to melt together. Once melted, remove from heat.
In a large bowl, combine almond flour, coconut flour, and chopped pretzels. (you can either chop pretzels with knife, crush in a baggy using your hand, or pulse in a food processor - so many options!)
Next, pour melted chocolate and peanut butter mixture into dry ingredients and mix together to form a dough like consistency. Let cool on the counter for about 20 minutes before making your bite sized balls. NOTE: Do not place in the fridge yet - you want to easily be able to roll the dough in your hands to form your bites. Use your hands to roll out about 15-18 tbsp sized balls and place on baking sheet. Place baking sheet with pretzel bites in the fridge for at least 2 hours to cool and form.
Once cooled, remove from fridge. Melt 3/4 cup of chocolate + 1/2 tbsp coconut oil in a sauce pan over medium heat. Once fully melted, turn heat off. Time to coat your bites! I like to coat one ball at a time. Roll ball in melted chocolate until fully covered and place back on baking sheet. Repeat this step for every ball. Place back in the fridge to cool for at least 2 hours. Remove from fridge and drizzle with extra peanut butter before enjoying! Store in the fridge for up to a week or freeze! ENJOY!
