Death by Chocolate Mousse

Oh my word. This mousse is UNREAL. Never will you ever believe what is in it – so I won’t tell you until you scroll down a little further :)

I first fell in love with chocolate mousse when I was younger working at The Black Pearl Restaurant in downtown Newport. I started working at The Black Pearl when I was 14 years old in the hot dog stand. I worked there every summer until I was 20! It was the best first job! Being in the center of downtown Newport with the tourists, festivals, boats, live music and working with all my friends, I couldn’t have asked for a better gig! Plus the food was obviously amazing too! The chef made the BEST chocolate mousse ever and honestly I don’t think I’ve ever had a better one. I remember it was always served in a beautiful glass dish and a chocolate drizzle on the top. I loved it! So rich and so satisfying with every bite!

I’m a huge chocolate fan, so there is never a thing as too much chocolate to me. When given the option between a dessert with chocolate in it and one without, I will choose the chocolate dessert every single time. That being said, chocolate mousse is a chocolate lovers dream. And although I can’t say mine is AS good as The Black Pearl’s, I am confident that I’ve got the healthy version down 100%.

This chocolate mousse is so decadent and creamy you will never believe that the secret ingredient is an avocado! Avocado’s are amazing to bake with because they give a thick, creamy, and rich feel to your desserts and you cannot taste them! I swear! Made with only 5 ingredients, this chocolate mousse can be whipped up in less than 5 minutes and will be eaten in 3! I love topping it with a little Redi Whip Almond Milk Whipped cream and sometimes even a little peanut butter! Yum!


What You’ll Need: (makes 2 servings)

  • 1 ripe avocado

  • 1/3 cup cocoa powder

  • ¼ cup light coconut milk

  • 2 tbsp. coconut sugar

  • ½ tsp. pure vanilla extract

Directions:

  1. In a food processor, combine all ingredients and blend until silky smooth. You want to make sure there are no lumps of avocado.

  2. Once silky smooth, taste test to see if it is sweet enough for you. If you need, add a little extra coconut sugar. Chill in the fridge for at least 2 hours before serving. ENJOY!
