Double Chocolate Chunk Banana Oatmeal

I woke up so hungry this morning! Sometimes I feel like I can go hours in the morning before I’m hungry (which I know is not the best thing to do) and other times I wake up feeling like I need to feast. Today was one of those mornings. I wanted something delicious, a little sweet, but most importantly something that was filling and would give me energy to get through the workday. Seeing that I never say no to chocolate, I figured why not my double chocolate chunk oatmeal?!

Oatmeal tends to be the breakfast I go for when I’m feeling a little lazy. I make my oatmeal in the microwave – lazy girl status! But I find that it makes it super fluffy, especially when I add in half of a chopped up banana. This is my sneaky little trick for every oatmeal dish I make in the microwave to make it extra yummy! Adding the banana adds some natural sugar to sweeten it up, while also providing a creamier, fluffier oatmeal. Have you ever noticed that when you put a frozen banana in a shake your shakes come out a lot thicker and creamier? Same thing happens here! It is the best trick – so hopefully you like bananas!!

You don’t need many ingredients to whip up this dessert for breakfast, just a few of my favorite staples! Made with only quick oats, bananas, cacao powder, crunchy almond butter, vanilla, and almond milk, you can have this bowl of chocolatey goodness in front of you in less than 5 minutes! Plus, kids will love it and it’s a great way to make oatmeal exciting for everyone!

What You’ll Need:

(per serving)

  • ½ cup organic quick oats

  • ½ cup + 2 tbsp. almond milk

  • ½ banana, chopped

  • 1 heaping tbsp. crunchy almond butter

  • ½ tbsp. cacao power

  • 1/8 pure vanilla extract

  • ½ tbsp. dark chocolate chips

Directions:

  1. In a small microwavable bowl, add oats, banana (save a few slices for the topping), and ½ cup almond milk. Microwave for 1 minute and 30 seconds. Remove and mix well. If there is any milk left over microwave for another 10 seconds until all milk is gone and oats are fluffy.

  2. Next, add in almond butter, cacao power, and vanilla. Mix well until fully combined. Then add 2 tbsp. almond milk to help make it a little creamier. You can add more if you would like. I scoop oatmeal out into a new bowl so the bowl I’m eating it out of isn’t scorching hot – but that is optional.

  3. Drizzle a little extra almond butter, sliced banana, and chocolate chips on top and ENJOY!
