Double Chocolate Chunk Cookies

Ah, it’s the WEEKEND!! I have been waiting for this since Sunday night ;) Haven’t we all?! I know I’m not alone! And the only way to make this Friday a little sweeter is to make these cookies!! Yes please!


Ok, but NUF SAID – let‘s get to the good stuff. I had myself at DOUBLE CHOCOLATE….Hello, my name is Taylor and I’m a chocoholic. Seriously though, the more chocolate the better. You know what goes well with chocolate….MORE CHOCOALTE. These double chocolate chip cookies are amazing! I love them, Will loves them, Lip tried to eat them, as did the ants on the counter….errrrrr. Don’t worry though, I saved them! Totally ant free. LOL.

I used to make a double chocolate chip cookie all the time from one of my favorite bloggers Balance with B. She has this AMAZING recipe for double chocolate chip cookies with an avocado base. They are unreal! Honestly, before those cookies, double chocolate chip was never really my thing. I always preferred a plain chocolate chip cookie, but that recipe changed me. I’m currently laughing at myself because sometimes I feel like I am so dramatic when I’m talking about food but I seriously just love it THAT much….I do not eat to live. I LIVE to eat, and I want to live to eat these cookies every damn day.

Food is a huge part of my life, so when I create a recipe that fits into the healthy lifestyle I strive for I’m always proud of myself. It’s amazing that we haven’t all always eaten like this. Eating whole foods does not mean you are missing out on flavor or sacrificing anything! It just means you’re choosing to fuel your body with real, whole, nutritious, nutrient dense foods that allow you to perform and live your best life. Who wouldn’t want that?!

These cookies actually remind me slightly of a brownie, which I’m sure by now you’re starting to catch on that anything that resembles a brownie sundae I’m game for. To be honest, I’m not really sure how or when these came into my kitchen. I swear I make my best recipes when I don’t think about them for longer than 5 minutes. I’m a natural over-thinker, like BIG TIME, and it is definitely not one of my best attributes, but when I can get out of my own head I do my best work – in all aspects of my life honestly. For example, when I made these, I had no plans of baking that day, yet I somehow found myself in the kitchen pulling out all of these ingredients and whipping up one of the best double chocolate chip cookies I’ve ever had.

I prefer a softer style cookie over a crunchy cookie, but these cookies are the perfect mix because they are soft and gooey in the middle with a slight crunch around the outside. They are gluten free, dairy free, peanut free, paleo, and my personal favorite – guilt free. Throw some cashew-milk ice cream in between two for a cookie sandwich, or warm one up to mimic a brownie sundae, or just enjoy as is! Any way you choose is going to be a good way – I promise!

What You’ll Need:

(makes about 18 cookies)

Dry Ingredients:

  • 1 cup oat flour

  • 1 cup almond flour

  • ½ cup cacao powder

  • 1 tsp. baking soda

  • ½ cup Hu Kitchen Dark Chocolate Gems + an extra small handful for when they come out of the oven!

Wet Ingredients:

  • ½ cup coconut sugar

  • ¼ cup coconut oil

  • ½ cup pure maple syrup

  • 2 tsp. vanilla extract

  • 1 egg

Directions:

  1. Preheat the oven to 350 degrees. If you are not using a pizza stone, line a baking sheet with parchment paper and set aside. (If you’ve read previous cookie recipes from me, you know I love to bake all my cookies on a pizza stone. I think they come out better!)

  2. In a small bowl, combine all dry ingredients (minus the chocolate chips) and mix well.

  3. In a large bowl, combine all wet ingredients and whisk together. Next, gradually add the dry ingredients to the wet ingredients and mix until fully combined. Fold in chocolate chips.

  4. Using two spoons, scoop tablespoon size cookies onto your baking sheet or pizza stone. (You’ll notice the dough may be a little sticky - that’s ok! Hence that spoons ;) ) Bake for 11-12 minutes. Remove from oven and place a couple extra chocolate gems on top of each cookie and let them melt. The more chocolate the better, right?! Let cool before serving. ENJOY!
