this cake is paleo, gluten free, dairy free, refined sugar free, and just insane 💯 the double chocolate gives this cake such a decadent flair. it’s perfectly fudgy and moist. every baked goods dream 🤗 this cake is perfect for birthdays, holidays, celebratory events, or just a random night that you feel like you deserve a chocolate cake! life is too short to save this one only for a special occasion!
there may be a lot of areas in my life that I can’t control right now, but one thing I can control is how and what I bake/or cook. I feel like I almost escape from reality in the kitchen. same way I feel teaching classes. it’s hard to explain but those moments just feel reeeeeally good and we all deserve to feel good! & this one makes me feel really good right now☺️
WHAT YOU NEED:
▫️2 eggs
▫️2 tsp vanilla
▫️1/2 cup unsweetened applesauce
▫️1/2 cup coconut sugar
▫️1/2 cup unsweetened almond milk
▫️1 cup almond flour
▫️1/2 cup cacao powder
▫️2 tsp baking powder
▫️1/4 tsp himalayan pink salt
▫️1 tbsp coconut oil
▫️1/2 cup dark chocolate, melted

HOW TO:
Preheat the oven to 350 degrees and line an 8x8 baking dish with parchment paper.
In a large bowl, whisk together eggs, vanilla, applesauce, coconut sugar, and almond milk. Set aside.
In a small bowl, combine, almond flour, cacao powder, baking powder, and salt. Set aside.
In a small sauce, over medium heat, melt your dark chocolate and coconut oil together. Make sure to keep your eyes on this and consistency stir the chocolate so that it doesn’t burn. Once fully melted, remove from heat and pour into your large bowl with your other wet ingredient. Mix well.
Next pour dry ingredients into wet ingredients to combine all ingredients.
Pour batter into pan and bake for 28 minutes. Remove from oven and let cool for at least an hour before frosting. *TIP: I like to add 2 tbsp of almond milk to my Simple Mills frosting and blend with a handheld mixer. Makes it a lot easier to frost!* Sprinkle with chocolate sprinkles and ENJOY!
