EPIC Grilled Cheese Sandwiches

getting through my work week with these ✨EPIC GRILLED CHEESE SANDWICHES✨there’s something about a well made sandwich 🥪 that is unbeatable. the most basic lunch is a turkey sandwich, but I don’t do basic when it comes to food. i’m obsessed with flavor and elevating a traditional meal. this is that 👏🏻 sure you could make a grilled cheese or a turkey sandwich and they would be delishhhh but if you also have the option to combine the two into one why wouldn’t you?!

my two go-to’s right now are a sweet n spicy chicken grilled cheese or a turkey pesto grilled cheese. both equally delicious but still a little different! these are basically just fancy grilled cheeses! you ready to level up?!

WHAT YOU NEED for SWEET N SPICY CHICKEN:

+ 1 package organic chicken fingers, marinated & cooked

+ marinate (1/2 tbsp olive oil, 2 tbsp maple syrup, 1 tsp sriracha, salt + pepper)

+ 2 slices sourdough bread

+ 1/4 cup pulled sweet n spicy chicken

+ 1/4 cup shredded manchengo cheese

+ 2 tbsp sautéed onions

+ 1/4 roasted red pepper

+ 1 slice crumbled bacon

+ handful of spinach

+ 1/2 tbsp grass-fed butter

WHAT YOU NEED for PESTO TURKEY:

+ 2 slices sourdough bread

+ 2-3 slices deli turkey

+ 1/4 cup shredded manchengo cheese

+ 2 tbsp chopped red onion

+ 1 tbsp pesto

+ handful of spinach

+ 1/2 tbsp grass-fed butter

HOW TO:

  1. Spray a sauté pan with cooking spray and let warm over medium/high heat. Spread butter on the outside of each slice of bread. Layer first with cheese, then meat and add ins on choice. TIP: make sure there is cheese on each side of bread to help the sandwich stick together. Let cook for about 3-5 minutes on each side, or until golden brown. Crunchy, crispy, & delicious. ENJOY!
