Everything But the Cinnamon Sugar Bagel Toes

Ohhh boy! It has been quite the day already! I had planned to get this post out to all you all by noon today but life happened and I’m learning that when I plan things out they never really go quite as “planned.” If you feel like a funny story, here’s what happened. Every Tuesday I log onto my work computer around 6am and then log off at 830am to go teach a spin class down at WAVE. My class starts at 9am and I’m usually home by 10:15am and able to continue my workday. However, today was a little different! When I got home from teaching my class I realized that my house key was NOT on my key chain…in fact, I knew exactly where my key was because I could see it sitting on the windowsill inside, right by the front door. I couldn’t even get mad, I just laughed to myself. Yesterday during lunch I had gone for a walk and never put it back on my chain. My boyfriend yells at me for this all the time because he is always warning me that one day I am going to forget to put it back on and get locked out. Well, isn’t he just a smarty pants because it turns out today was that day! Long story short, after attempting to find a window to scoot through and having no luck my boyfriend ended up leaving work to come unlock the door for me – we’re gonna keep him! But this wasn’t until after I had to explain to my boss why I was going to be late logging back on, having to pee in my bushes, having the neighbors dog bark at me while I was trying to break through a window, and having my cat stare at me the entire time wondering what the hell I was doing. All in all – makes for a funny story and life is all about those moments filled with laughter! Anyways, that’s why this is coming out a little later today, but I promise these Bagel Toes are worth the wait!

Right before I started to write this post I texted one of my best friends asking her if everyone knew what bagel toes were, or if it was just a local thing. You see, growing up there was one, and only one, bagel shop that we were all racing to get to on a Saturday and Sunday morning. The best Bagel Shop in town – still is to this day – Bagel Boys. Ugh, the smell of those bagels would make our kitchen smell like a bakery for days. Thinking back on it now, it feels like it was almost every weekend that my parents would come home from one of their morning rides with a fresh bag of bagels from Bagel Boys for us. It was always a treat waking up to the smell of fresh made bagels and they were always so delicious – I never wanted them to end! Not only is Bagel Boys known for the most amazing bagels in town, but they are also known for what they like to call a “bagel toe.” Bagel toes are basically like a miniature “toe” shaped bagel bite – (by toe shaped, I mean a bite-size rounded rectangle haha). They truly are the cutest little things! It’s funny to say food it cute but it’s true in this case! They’re like a mini carb party in your mouth! Who doesn’t love that?!

After a quick conversation with one of my girls and a good old Google search, it is confirmed that bagel toes are in fact a local thing! I seriously had no idea! Genius! The cinnamon sugar bagel toes were always something to talk about when my friends and I were frequent flyers back in the day! I wanted to try to mimic that same cinnamon sugar feel to bring me back to my high school days - turns out a little coconut sugar and a dash of cinnamon can really make your mouth water. I also really love an everything bagel as well, so I wanted to create both flavors so I didn’t have to pick! Thanks to Trader Joe’s Everything But The Bagel seasoning I didn’t have to do too much work to create the flavors for these!

This recipe is similar to my sesame bagels that are also on the blog but with a couple extra ingredients to make them almost perfect! They are no Bagel Boys’ bagel toes, but they are still delicious!! These bagel toes are gluten-free, dairy-free, filled with healthy complex carbohydrates to give you energy throughout the day, and in my opinion totally guilt-free. People tend to be scared of carbohydrates – but carbs are not something to be scared of. Your body needs carbohydrates for fuel and to give you energy throughout the day. Life is a balancing act and I believe in a balanced diet. These are the perfect snack to pair with a couple scrambled eggs for breakfast, enjoy with a little dairy-free (I use Kite Hill) cream cheese, or grab for a quick snack after you have been locked out of your house for an hour (ME! – hehe). I hope you love these as much as me!! ENJOY!

This recipe yields about 10 bagel toes.

What You’ll Need for Bagels:

  • 1 cup oat flour

  • ½ cup almond flour

  • ¼ cup tapioca flour

  • ½ tsp. Himalayan pink salt

  • ½ tsp. baking powder

  • ½ tsp. baking soda

  • 2 tbsp. apple cider vinegar

  • ½ cup dairy-free Greek yogurt

  • 1 egg

What You’ll Need for Bagel Toppings:

  • 1 tbsp. grass-fed butter, melted

  • 1 tbsp. coconut sugar + dash cinnamon (Cinnamon Sugar Toes)

  • Everything but the Bagel (EBTB) seasoning (Everything Toes)

Directions:

  1. In a medium bowl, mix together oat flour, almond flour, tapioca flour, salt, baking powder, and baking soda.

  2. In a small bowl, whisk together apple cider vinegar, Greek yogurt, and 1 egg.

  3. Pour wet ingredients into dry ingredients and combine. Kneed for about a minute or so and form dough into a ball. Wrap dough in saran wrap and let sit in the fridge for at least 2-3 hours.

  4. Once dough has chilled, preheat the oven to 350 degrees and line a baking sheet with parchment paper. If you have a pizza stone, I recommend using that, but either will work!

  5. Place dough on a clean surface (you might want to put a little extra flour on the counter before placing your dough down to help it not stick). Using your hands or a roller, roll out your dough to remove the shape of the circle. You’ll want the dough to now almost form a rectangle shape so that you can slice the dough into ten small sections. Using a butter knife, slice the dough evenly into ten (10) pieces.

  6. Using your hands, form the bagel toes into the shape shown above and place onto your stone or baking sheet and set aside.

  7. Meanwhile, mix your sugar and cinnamon together on a small plate and empty your EBTB seasoning on a separate small place. Melt 1 tbsp. of grass-fed butter in a small bowl.

  8. Next, dip the top of each bagel toe into the melted butter and then roll that same surface into either the cinnamon sugar mixture OR the EBTB seasoning. Once all bagel toes have their desired topping, place your bagel toes in the oven for 22-25 minutes. Serve with a little dairy-free cream cheese or grass-fed butter and ENJOY!
