i have your must have friday night pizza recipe right here👌🏼yes, it’s thursday, but i’ve been dreaming of friday since monday, soooo….✨FIG BACON GOAT CHEESE PIZZA✨this pie screams friday night! pizza’s on the weekend are a must 💯%. pre-covid, we actually started having pizza 🍕 nights every friday with friends - it was so fun! we definitely stole the idea from the show a million little things 💁🏼♀️ we were all obsessed with it for a minute there haha - every Friday night we’d make a different kind of pizza and just hang out, listen to music, and chill after a long week🙌🏻it was the best! something i definitely want to pick back up again when things go back to normal!
even though they look a little different now, Will and i still try to have our weekly pizza night. thanks to a friend of ours (Marci) who has literally supplied us with an endless supply of Wood Grilled Pizza Crusts 🤤 our freezer is like Mary Poppin’s bag - a never ending supply of pizza crusts which makes pizza nights extra easy and delish! 👏🏻👏🏻👏🏻
this pizza is salty & sweet! layered up with a sweet fig spread, crunchy salty bacon 🥓 , sweet sautéed onions 🧅and crunchy arugula, this flavor combo is one you don’t want to miss! what you need is down below 🙃
WHAT YOU NEED for PIZZA:
▫️1/3 cup fig spread
▫️5 slices applegate bacon, cooked & chopped (about 1/2 package)
▫️1/2 onion, sliced and sautéd
▫️1 small package of honey goat cheese
▫️2 cups fresh arugula
▫️1 lb organic smart chicken chicken fingers
▫️2 tbsp olive oil
▫️1 clove fresh garlic, chopped
salt, pepper, & garlic powder to taste
▫️1 pizza crust (my favorite are wood grilled pizza or simple mills)
HOW TO:
Preheat the oven to 350 degrees. In a medium bowl coat chicken with 1 tbsp olive oil, fresh garlic, salt, pepper, and garlic powder to taste. Put chicken in a glass pan and bake for 30 minutes. Once cooked, cut into bite size pieces for topping and set aside.
Meanwhile, warm 1 tbsp of olive oil in a sauté pan. Once warm, add sliced onions and cook for about 7 minutes to caramelize. Set aside.
Once chicken is cooked, turn oven up to 425 degrees. If using Simple Mills pizza dough, follow directions on the back of the box to prep dough. If using a Wood Grilled Pizza crust warm in oven for about 2-3 minutes before starting to prepare pizza.
Layer your pizza dough first with fig spread as the base. Top with chicken, bacon bits, sautéd onions, and crumbled goat cheese. Cook for about 15-20 minutes or until crust starts to turn golden brown. Once cooked, top with fresh arugula and serve warm. ENJOY!
