who wants to have a✨FRIED CHICKEN & AVOCADO TACO✨parrrtay?! not sure what is my favorite thing about these tacos 🌮 the fact that they’re are “fried” 🤩or the fact that they are drizzled with a MAPLE SRIRACHA GREEK YOGURT AIOLI 😋 put the two together and 💥 almost speechless. and i say almost because it takes a lot for me to be silent 😂
these may seem complicated at first glance but they really aren’t! leave the “frying” up to the air fryer and the recipe up to me! a few minutes of prep and you’ll feel like you’re at your favorite Mexican restaurant 👏🏻 pair these tacos with my favorite 🍹RASPBERRY LIME SKINNY MARGARITA🍹 (recipe also on my blog) and it’s about to feel like a Friday night on a Tuesday! 🎉
these tacos are gluten free, dairy free, grain free, paleo, crazy good, and can be vegan if you just stick with the avocado! kk, let’s do it! 🥑 🍗 🌮

WHAT YOU NEED for FRIED CHICKEN & AVOCADO:
(serves 3-4)
▫️1.5 lbs organic chicken tenders
▫️1 avocado, sliced
▫️1/2 cup oat flour
▫️1 cup gluten free bread crumbs
▫️2 eggs
▫️1/4 cup maple syrup
▫️2 tsp sriracha
▫️2 tbsp coconut aminos
▫️1 tsp garlic powder

WHAT YOU NEED for MAPLE SRIRACHA GREEK YOGURT AIOLI:
▫️1/4 cup unsweetened greek yogurt
▫️2 tbsp maple syrup
▫️2 tsp sriracha
▫️1 tsp garlic powder

ADDITIONAL NEEDS:
▫️siete hard shell tacos
▫️arugula
▫️sliced jalapeños
HOW TO MAKE FRIED CHICKEN & AVOCADO TACOS with AIOLI:
In a small bowl, whisk together maple syrup, sriracha, coconut aminos, and garlic powder. Put chicken tenders in a bowl or tubberware and pour marinate over chicken. Let marinate for at least 1 hour. NOTE: if chicken tenders are on the larger size, I recommend slicing vertically down the middle.
Meanwhile, whisk eggs in a small bowl and set aside. Place oat flour in a separate small shallow bowl. Repeat this step for bread crumbs as well.
If avocado is not sliced, do that now. Keep in mind not to slice too thin, as you will be rolling in egg wash and flour/breadcrumb mixture to fry.
Take each slice of avocado and dip in this order: egg, flour, egg, breadcrumbs. Repeat this step for each piece of avocado and set aside.
Next, it’s time to coat the chicken tenders. Take each chicken finger and dip in this order: flour, egg, breadcrumbs. Repeat this step for each piece of chicken.
Once all avocado and chicken pieces are coated, place in your air fryer at 360 degrees for 20 minutes. Flip half way through. If you do not have an air fryer, you can do this step in the oven as well.
While chicken and avocado are cooking, it’s time to make your sauce. Mix all ingredients for sauce in a small bowl and set aside.
Once everything is ready, it’s time to build those tacos! Layer each shell with arugula, chicken, avocado, jalapeños, and drizzle with sauce! I love to enjoy these tacos with a small side salad or Alexias sweet potato fries! ENJOY!
