Order’s UP! My lunch for the week ✨HABANERO PULLED CHICKEN SALAD✨(whole 30 approved ☺️). What’s not to love about chicken salad? Everyone loves it, right? So funny because I actually saw buffalo chicken salad served on a chip as an option for one of the appetizers on our wedding day. I mean how do you go wrong with that?! You can’t!
I’m always looking for healthy lunches that I can prep on Sunday’s to enjoy throughout the week so I don’t have to worry about it. Prepping this ahead of time makes your workdays that much easier and will help you stay on track!
This chicken salad is as easy as it gets though 💯 It’s gluten free, dairy free, organic as always, paleo, and is whole 30 approved. I wanted to add a little kick 🔥 to it without making it the traditional buffalo flavor and the habanero hot sauce from @sietefoods is so flavorful and works perfectly. Serve it on chard lettuce, put it in a wrap, a roll, or just scoop it out of a bowl with your favorites crackers, this chicken salad can be enjoyed so many different ways! Perfect for healthy lunches all week long, or even enjoyed with chips and veggies at next weeks Super Bowl! 🏈
WHAT YOU NEED:
(makes 4-5 servings)
▫️1 lb. organic chicken breast
▫️2 cups @pacificfoods bone broth, unsalted
▫️1 cup filtered water
▫️1/2 white onion
▫️1/2 cup celery, chopped
▫️1/2 cup red onion, chopped
▫️1/2 cup carrots, chopped
▫️1/3 - 1/2 cup @chosenfoods avocado oil mayonnaise (can vary based on how you prefer your chicken salad)
▫️2 tbsp. @sietefoods Habanero Hot Sauce
▫️1/2 tsp. himalayan pink salt
▫️1 tsp. black pepper
▫️1 tsp. garlic powder
HOW TO:
1. In a medium saucepan, bring bone broth, water, and white onion to a boil. Once boiling, add in chicken, reduce heat to medium, and cover for 10 minutes.
2. Once chicken is cooked, use two forks to pull it apart. Add pulled chicken, celery, red onion, carrots, mayo, hot sauce, salt, pepper, and garlic to a large bowl and mix well. Place in an airtight container in the fridge for up to 5 days. ENJOY!
