just thinking of other ways to enjoy taco tuesday’s over here without getting bored. these new JALAPENO LIME BURRITO BOWLS are about to put a new spin on that traditional taco tuesday. not sure why i’ve never made jalapeño lime rice before tbh! if you’ve been around for a while you know i love making coconut lime rice. it’s my favorite and pairs so well with almost everything. this is basically that recipe, but just adding in a fresh jalapeño to give it that extra kick!
i topped it with some flavorful chicken, refried beans (again - something I never knew I was missing until recently), salsa, fresh jalapeños, scallions, and Kristin Cavallari’s avocado crema from True Roots! We love every bite of this bowl! The jalapeño rice and refried beans really put a different twist on our latest taco tuesday and are definitely here to stay!
if you love taco tuesday as much as I do but have been looking for a new recipe to switch it up a bit and still stay true to all those mexican flavors this one is for you!
WHAT YOU NEED for BURRITO BOWL CHICKEN:
(makes about 4-5 servings)
2 lbs organic chicken, cut in pieces
3 tbsp tapioca flour
2 tsp garlic powder
1 tsp smoked paprika
1 tsp chili powder
1/2 tsp pepper
1/4 tsp salt
2 tbsp avocado oil

WHAT YOU NEED for JALAPENO LIME RICE
(makes 4-5 servings)
2 cup basamti rice
2 cans light coconut milk
2 jalapeños (seedless)
1 lime + 1 zest
2 tsp garlic powder
salt and pepper to taste

REMANING INGREDIENTS NEEDED;
1/2 can refried beans
sliced jalapeños
chopped scallions
salsa
avocado cream from True Roots or use sliced avocado
HOW TO MAKE CHICKEN:
Cut chicken breasts into small bite size pieces and place in a large bowl.
In a small bowl mix together flour and spices. Pour mixture over chicken mix until chicken is evenly coated.
In a medium saucepan, warm avocado oil over medium heat. Once warm, place chicken in pan and cook four about 5 minutes on each side. After about 10-12 minutes reduce heat to a simmer and let the chicken simmer for another 5-10 minutes.

HOW TO MAKE RICE:
Follow the directions on the back on the box to make rice. Replace the water with the coconut milk, and add in the lime juice and zest. Slice jalapeño vertically to refrain from using the seeds. Add jalapeño to pot and let the rice cook per box instructions. Once cooked, add in garlic, salt, and pepper.

TIME TO ASSEMBLE - Layer a bowl with refried beans, avocado creama, rice, chicken, and then top with your choice of salsa, sour cream, avocado, fresh jalapeños, and scallions. ENJOY!
