weekends are for brunch, and no brunch is complete without this ✨MAPLE BACON FRENCH TOAST✨ go big, or go home👏🏻 this is what dreams are made of 🙌🏻 it’s time to treat yourself this weekend with this sweet & salty tower. this isn’t your regular french toast, it’s the cool french toast. we’re adding bacon bits baby! and bacon 🥓 makes everything better, duh!
not to mention it’s - gluten free, dairy free, not really sugar free 🤷🏼♀️(hello maple syrup - key ingredient) but at least it’s natural 🙃 french toast is so easy and so tasty. there’s only one right way to start your weekend & it’s with all this goodness! good vibes only. WHAT YOU NEED:
(makes 2 servings)
▫️2 eggs
▫️1 cup light coconut milk
▫️1/4 tsp cinnamon & nutmeg
▫️1/4 tsp vanilla
▫️6 slices cooked bacon, chopped
▫️6 slices ezekiel bread (or bread of choice)
▫️1-2 tbsp coconut oil for the pan
▫️maple syrup for drizzle
▫️1 tbsp natural peanut butter (optional)
HOW TO:
In a large bowl whisk together eggs, milk, vanilla, spices, and chopped bacon. TIP: save a little bit of the bacon to top off the french toast at the end.
Warm oil over medium heat in a saute pan. Dip each slice of bread into milk mixture to fully cover and then move each slice of bread to the pan to cook. You can probably cook two slices at once depending on your pan size. Let bread cook for about 3-5 minutes on each side, or until golden. NOTE: The bacon tends to fall to the bottom of the mixture, so make sure you use a spoon to get bacon on each slice of bread before you cook it.
Once cooked, drizzle with maple syrup, peanut butter, and top with extra bacon. ENJOY!
