CHICKEN WINGS, I LOVE YOU. Chicken wings are legit my favorite food to order at a restaurant. I like them spicy, I like them sweet, fried, baked, whatever! Any way you put a chicken wing in front of me I’m going to eat it! Also NOT a chicken tender, I want the REAL deal. Bone in, eating them with my hands, sauce all over my face. The messier the better!
I’ve always loved wings but I think my obsession with them grew a few years back. Will and I love to go to New Hampshire for long weekends to hike, or ski depending on the season. I always joke and say the hike is only as good as the draft beer after it! It’s true though! That and the wings! After every hike we go on, we go to a pub to cool off with a few beers and a plate of chicken wings. His dad owns a house up in Campton, NH, which is right in Waterville Valley if you’re familiar with the area. There is a small little pub called Mad River Tavern that is about five minutes away from the house. Stopping in after a hike or a day on the mountain is one of our favorite parts about those long weekends. Mad River Tavern has these spicy maple chicken wings that we are the number one fans of. I just love the sweet and spicy combo…enter my version: maple sriracha chicken wings.
I make these wings for almost every party we have. They are always a big hit and everyone loves them! I started making these chicken wings about a year ago. Being a chicken wing lover myself, I wanted to figure out the best way to make them. I started putting them in the oven first, then I tried broiling them, then the air fryer. I wanted to make sure I tried every way because that’s how much I love them! To be honest, I love them every way, but they definitely taste a little different depending how you choose to make them. I find them to have a better crisp if you bake them and then finish them with a broil, but I also do love them in the air fryer, I just find that they aren’t as crispy. If you want to try them in the air fryer though I recommend coating them with the dry rub and then putting them in the air fryer for the full time. Once they are cooked, coat them in the sriracha maple glaze and put them back in the air fryer for half the time! Still amazing, just a slightly different feel!!
I also never knew how easy they were to make at home until I started to try. I always thought of them as one of those foods you had to get at a restaurant for them to be any good, but that is so far from the truth - which is the best news because now I can enjoy them whenever I want! These Maple Sriracha wings are crispy, sticky, and have a subtle spicy kick that will have you fighting over the last wing! We have these wings now almost once a week and you’re about to too once you try these!
What You’ll Need for Wings:
1 package of organic chicken wings (about 12)
2 scallions, chopped
your favorite dipping sauce
What You’ll Need for Dry Rub:
2 tbsp. oat flour
1 tsp. garlic powder
1 tsp. onion powder
½ tsp. smoked paprika
½ tsp. black pepper
½ tsp. pink Himalayan salt
What You’ll Need for Sauce:
¾ cup pure maple syrup
1 tbsp. tamari
2 tsp. sriracha (add another ½ tsp. if you want them to be a little spicier)
1 tsp. fresh garlic
Directions:
Preheat the oven to 350 degrees and line a baking sheet with parchment paper. Remove chicken wings from package and place on top of a cutting board topped with paper towels. Using extra paper towels, pat dry the chicken wings to remove all the moisture. Set chicken wings aside in a medium/large bowl.
In a small bowl, combine all ingredients for the dry rub and mix until fully combined. Pour dry rub ingredients over chicken wings. Using gloves, or a pair of tongs, move around the chicken wings until they are fully coated with the dry rub. Line chicken wings on baking sheet.
Next bake the wings for 22 minutes. Remove the sheet from the oven and flip each wing to the opposite side. Bake for another 22 minutes.
Once the wings are fully baked, turn your oven on to a high broil. Bake the wings for two minutes on EACH side. Remove the wings and set aside.
In a medium saucepan over medium heat, whisk together all ingredients for sauce. Bring the sauce to a boil and then reduce the heat to simmer. The sauce will look thin at first, but it will slowly thicken over time. After about 3 minutes of the sauce simmering, add in your chicken wings. Fold the sauce over the chicken wings and mix well so the wings become fully coated in the sauce. Let simmer for about 7 minutes or until the sauce reaches a consistency you like. The longer you let it simmer, the stickier and thicker the sauce will become.
Top with chopped scallions, your favorite dipping sauce, a ton of napkins and ENJOY!
