No Bake Sugar Free CAKE BALLS

✨NO BAKE SUGAR FREE CAKE BALLS✨ no, you are not dreaming 💭 this is real life & ya, I might have just made all your dreams true 🥳NO bake😳 NO sugar🤯

Dates amaze me tbh. I used to be scared of them bc all I remembered was Phil and Lil in The Rugrats movie saying “Dates! They make ya 💩 !”🤣 Does anyone remember that line?! It took me years until I eventually tried them, but they are a magical baking ingredient! The dates serve as the sweetener in these gluten free, dairy free, vegan, paleo, no sugar added cake balls! 🤩 These really don’t taste too far off from my other cake ball recipes! (I have a carrot 🥕 cake, traditional 🍰 cake, & brownie 🍫 truffle cake ball recipes all up on the blog if you aren’t feeling these! - LINK IN BIO) They are the perfect mid morning, late afternoon, or after dinner snack that won’t let you fall off track! 🙃😋

WHAT YOU NEED:

(makes about 15 balls)

▫️1 1/2 cup @bobsredmill almond flour

▫️1/4 cup coconut flour

▫️2 tsp. pure vanilla

▫️1/4 cup @carringtonfarms liquid coconut oil

▫️1/4 cup @silk unsweetened almond milk

▫️7 @woodstockfoods dates, pitted and halved

▫️1/4 cup pecans chopped (for topping)

▫️1/4 cup @navitasorganics cocoa nibs (for topping)

HOW TO:

1. Mix almond and coconut flour in a medium/large bowl.

2. Next, warm dates, milk, oil, and vanilla over medium heat in a small saucepan. Stir continuously so it doesn’t burn (only takes about 3-5 mins). While stirring, trying to mash up the dates as much as possible. This will help them blend well when you put them in the food processor to make the date paste.

3. Next, blend your date paste in a food processor to smooth out evenly. Once smooth, add to your flours.

4. Using your hands, mix the flours and date paste together to form a dough like texture. Next, use your hands to form about 15 golf ball sized balls. OPTIONAL: Roll balls in pecan or cocoa nib toppings. NOTE: You will have to gently press the toppings into the cake balls to stick! ENJOY!
