One GIANT (ass) Protein Cookie

there are two ways that I know how to cure the Monday blues. one way is to get in a killer workout šŸ‹šŸ¼ā€ā™€ļø- working out always shifts my mood. and the second way is to make āœØONE GIANT (ass) PROTEIN COOKIEāœØ & since iā€™ve already cried once today (i cry often so this is nothing you need to feel sorry for me for - really šŸ˜‚šŸ˜‚ itā€™s an overwhelmed cry šŸ¤£) iā€™d say the Monday blues are hitting me hard & this cookie is a necessity. the reality of Monday often hits hard for me tbh. i have a job that I find to be extremely stressful at times and I canā€™t say I handle it well šŸ¤·šŸ¼ā€ā™€ļø and baking and working out are my escapes of that reality šŸ’Æ so if you are also feeling like you need to escape from this gloomy Monday i suggest you head into your kitchen šŸ‘©ā€šŸ³ and whip up this protein cookie! do what you gotta do to turn the day around!

this cookie has over 20 grams of protein šŸ‘šŸ» is gluten free, dairy free, vegan, and takes less than 15 minutes to make šŸŽ‰ donā€™t let her thinness fool you either, she is gooey & delightful! šŸŖ the best part is itā€™s HUGE but itā€™s still one serving in my opinion! go crazy, eat the whole damn thing :) šŸ¤¤

WHAT YOU NEED:

(makes one giant ass cookie)

ā–«ļø1 tbsp coconut oil, at room temp, but not melted

ā–«ļø2 tbsp @wholesomesweet coconut sugar

ā–«ļø1/2 tsp vanilla

ā–«ļø1 tbsp @woodstockfoods creamy almond butter

ā–«ļø1 tbsp @silk almond milk

ā–«ļø1/4 tsp baking powder

ā–«ļø2 tbsp @bobsredmill almond flour

ā–«ļø1 scoop protein powder of choice

ā–«ļø1 tbsp dairy free @lilys_sweets dark chocolate chips

HOW TO - preheat the over to 350 degrees. mix coconut sugar and coconut oil together in a both until smooth. add in all remaining ingredients and mix until fully combined. bake for 12-14 minutes. remove from oven and place some extra @hukitchen chocolate chips on top. ENJOY!
