If you say you don't like a good ole PB&J you are lying to yourself! What's not to like?! PB - goood, Jelly - gooood, PB&J - gooooood (this is a Friends reference....who knows it?!)
I remember in high school I would have a peanut butter and jelly sandwich almost every Friday, as if it was a treat. Still to this day when I make a PB&J I feel like I am treating myself! They taste like a cookie in my opinion!
ANYWHO! COVID-19 has made PB&J's very popular in our house. That being said, I was aiming for something different that would still give me those same flavors - enter this magical bar! This healthy little PB&J Energy Bar is ohhhhmyyyygaahhh DELISH!
The options for these are endless! You could eat it as is, crumbled on top of some greek yogurt, or warmed up with a scoop of cashew milk vanilla ice cream on top! Okkkk, I'm drooling now.
INGREDIENTS FOR BAR BASE:
- 1 cup oats
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/3 cup creamy natural PB
- 3 tbsp natural maple syrup
- 1/3 stick grass fed butter, melted (if you want to keep this recipe dairy free you can sub for ghee or coconut oil)
- 1/3 cup dark chocolate chips (optional - leave out if you want more of a strict PB&J feel)

JELLY BASE:
- 1/3 cup no sugar added organic raspberry jelly
- 2 scoops collagen
- 2 tbsp natural maple syrup

DIRECTIONS:
1. Preheat oven to 350.
2. Combine all bar base ingredients in a bowl and mix well.
3. Line a 9x12 glass pan with parchment paper and using your hands mold the cookie base into the pan. Don’t fill the entire pan (fill about 2/3. Save the remaining crumble to put on top of jelly base!) Bake for 10 mins.
4. While the base is cooking, in a saucepan on low heat, mix the ingredients for the jelly base, stirring frequently. Once the cookie base comes out of the oven, evenly spread the jelly on top.
5. Crumble the remaining cookie base on top. Put back in the oven for 20-25 mins or until golden.
6. Next step is the drizzle. You’ll need a little extra PB and Jelly. Using a spoon, drizzle over your bars.
7. Place in the fridge to cool (I put the pan on top of a rag) for about 30 mins.
8. Slice & enjoy!! YUM!!
