Peanut Butter & Jelly Stove Top Oats

there is no time of day that doesn’t pair well with peanut butter and jelly. PB&J is one of those combos that really just makes everything better. today we’re having some ✨PEANUT BUTTER & HOMEMADE JELLY STOVETOP OATS✨ i love a big bowl of oats for breakfast! always keeps me feeling full and satisfied so it’s perfect to jump start a productive day 🙌🏻

these oats are also super quick to make and only made with a handful of ingredients👏🏻 gluten free, dairy free, paleo, vegan, and refined sugar free, this is your complete healthy breakfast 💯 i’m also kind of obsessed with this jelly. this is the same jelly i use in my thumb cookies, or in the middle of my blueberry almond cupcakes 🧁 yum!! 😋 this recipes makes about a cup of the jelly so you can store the remaining in the fridge and use it on whatever you want all week long!

WHAT YOU NEED:

(makes one serving)

▫️1/2 cup organic quick oats

▫️1 cup unsweetened almond milk

▫️1 tsp vanilla

▫️1 tsp chia seeds

▫️1 tbsp natural peanut butter

▫️1/4 cup homemade jelly

WHAT YOU NEED for JELLY:

(makes about 1 cup)

▫️1 cup organic berries of choice

▫️1/2 squeezed lemon

▫️1 tbsp maple syrup

▫️1 tbsp arrowroot powder + 1 tbsp water

HOW TO make JELLY:

  1. In a small saucepan, bring all the ingredients for the blueberry jam (minus the arrowroot powder + 1 tbsp. of water) to a boil. Reduce heat to low and let simmer for about 2 minutes, stirring frequently.

  2. Meanwhile, in a small bowl combine the 1 tbsp. arrowroot powder + 1 tbsp. water. Mix well until a liquid forms. Add mixture to the saucepan and let simmer for another 2 minutes, stirring frequently. You will notice the sauce start to thicken – that’s good. Once thickened, set aside in a small bowl.

HOW TO make OATS:

  1. In a small sauce pan warm oats, milk, vanilla, chia seeds, and peanut butter over medium/high heat. Bring to a boil, then reduce to low and let simmer for about 3 minutes.

  2. Transfer cooked oats to a new bowl and drizzle with extra PB, maple syrup, and homemade jelly. ENJOY!
