Peanut butter jelly time – peanut butter jelly time! Is that a song – I feel like it is? Haha. Oh man. I LOVE me some PB&J! It is literally one of the best food combos and there’s something about it that just tastes like a cookie…so why not make it into an actual cookie?! Right?! Well, here you go!
For starters, I want to apologize that it has been a couple weeks since my last recipe release on here. I went on vacation up to New Hampshire for 2 weeks and was trying my best to relax and unwind, which meant taking a little bit of a break from my recipes and the daily duties of my normal life! It was a wonderful break and much needed. When I returned from NH, I had fully planned to jump right back into giving you guys all my favorite guilt free treats, but as we all have experienced before, sometimes plans don’t exactly go the way you “plan” them!
A few days after I returned home from NH, my boyfriend and I had plans to go to a pizza night at our friend’s house. Right before we left, my boyfriend asked me if I wanted to take a quick spin around Ocean Drive in the Miata on the way. Whenever he asks if I want to go for a ride in the Miata I always say yes! I love that car! As we were heading around the drive, he pulled over at Green Bridge so I could take a few pictures. Green Bridge is my favorite spot around the drive. I always say that I feel like it looks like a scene out of Pirates of the Carribean. It is just absolutely beautiful, and I kid you not I have to take a picture every time we drive past it! When I had finished taking my pictures I turned around and there he was holding a ring box and asking me to marry him. (insert awwwwwww - hehe). He had our families and a few friends waiting down at Gooseberry Beach to celebrate and it was the BEST night evvver! He’s the peanut butter to my jelly.... (pun intended haha I think I’m funny, we know this!) Anyways, it goes without saying that I was a little distracted for the next week and that is all part of the reason these cookies did not get posted on here sooner, so I apologize, but hopefully you forgive me! Plus, these are SO worth the wait!!
These paleo, almond flour peanut butter and jelly thumb cookies are gluten free, dairy free, and as always, guilt free! Made with 7 basic ingredients, you can have these ready to be eaten in almost no time at all! These barely lasted 3 days in my house, they were a huge hit! I approve these cookies for breakfast, a mid-morning or afternoon snack, or dessert!! Trust me, I had them for all! ENJOY!
What You’ll Need: (yields about 22 cookies)
¾ cup natural creamy peanut butter
½ cup coconut sugar
1 ½ tsp. pure vanilla
2 eggs
1 ½ tsp. baking soda
1 ½ cups almond flour
¼ cup organic jelly (½ tsp. per cookie ~ recipes yields about 22 cookies)
Directions:
Preheat the oven to 350 degrees and line a baking sheet with parchment paper. (I bake all of my cookies on a pizza stone – but either will work!)
In a large bowl, whisk together peanut butter, coconut sugar, vanilla and eggs.
In a separate small bowl, combine baking soda and almond flour. Gradually pour dry ingredients into wet ingredients and mix until fully combined.
Using your hands, roll the dough into a ball shaped cookie (slightly smaller than a golf ball). Use your thumb to press a small circular dip in each cookie for your jelly.
Next, place ½ tsp. of jelly into the center of each cookie. Bake for 13 minutes. ENJOY!
