Pulled Buffalo Chicken Taco Bowls

who else thinks that taco tuesday should just be for every day of the week?! 🙋🏼‍♀️is that even a question honestly?! ✨PULLED BUFFALO CHICKEN TACO BOWLS✨ there is nothing that this pulled chicken can’t do. it truly takes every meal to the next level 🙌🏻 it is the BEST pulled chicken. EVER 💯 you’ve probably heard me talk about it a lot by now, but if you’re new around here, this chicken is literally mindless, makes your life 10x easier, and needs to be in your life 👏🏻

in addition to my love for this pulled chicken, you also probably know my obsession level for buff chix🥰 add onto the list of next level. not into buff chix? no issue there. mix with bbq sauce, honey mustard, leave plain, there really is no wrong answer 🤷🏼‍♀️

this dinner is what dreams are made of. throw the chicken in the crockpot in the morning and make dinner in less than 15 minutes that night! the hardest part is making the rice……we got this! busy moms, busy working gals, men who want to impress their ladies but are scared not he kitchen - this one is for you! 🙃

WHAT YOU NEED for TACO BOWL:

(serves 4)

▫️the BEST pulled chicken (see blog post for how to)

▫️2 cups organic basmati rice, cooked

▫️1 onion, sliced

▫️1-2 tbsp avocado oil

▫️2 avocados, smashed

▫️1/2 lime

▫️1 organic guacamole seasoning package

▫️jalapeño lime late july chips

▫️1/2 cup kite hill plain yogurt

▫️1/2 cup green mountain mild salsa

WHAT YOU NEED for PULLED CHICKEN:

▫️2 cups bone broth, unsalted

▫️1.5 pounds organic chicken breast

▫️1 small onion, chopped

▫️2 large celery sticks, chopped

▫️2 garlic cloves

▫️1/3 - 1/2 cup the new primal mild buffalo sauce (optional - or sauce of choice: bbq, honey mustard, etc. anything will work)

HOW TO make PULLED CHICKEN:

  1. Turn your crockpot on low (for 8 hours) or high (for 4-5 hours). You can always also let this simmer on the stove all day if you don’t have a crockpot. Pour in 2 cups of pacific foods unsalted bone broth, onion, celery, garlic, and chicken and let simmer in pot for 4-8 hours depending on if you select low or high.

  2. Remove chicken from crockpot and pull apart using two forks. Toss in buffalo sauce and set aside.


HOW TO make SAUTED ONIONS:

  1. Warm avocado oil in a medium saute pan over medium heat. Once warm, toss sliced onions into the pan and cook for about 7 minutes or until golden brown. Set aside.

HOW TO make GUACAMOLE:

  1. In a small bowl, mash two avocados using a fork. Add in fresh squeezed lime and seasoning package. Once mixed, let sit in the fridge until time to serve.


HOW TO make RICE:

  1. Follow instruction on the back of the bag. Once cooked, add in 1 tbsp. grass fed butter, salt, pepper, and garlic powder to taste. Set aside.

HOW TO make TACO BOWL:

  1. Time to throw it all together. Grab a bowl and layer with rice, pulled chicken, sautéed onions, guacamole, salsa, sour cream (yogurt), and crunch up late july chips! ENJOY!
