Ok so the vote was unanimous! You ALL wanted it, so here it is!✨SALMON & CHICKEN WELLINGTONS✨This meal just screams special occasion to me. Probably because I’ve only ever had it on a special occasion - again BALANCE😉
This recipe actually comes from my Mom! She always made this on birthdays or for Christmas dinner growing up. She actually still does!🤍It was always a huge hit in our house! She does it a little differently than how I do it now, but she deserves all the credit on this one! 🥰 For the past few years Will and I have been making this for Valentine’s Day and it’s become a tradition I didn’t know I needed :) I promise once you try it, it’ll be the tradition you didn’t know you needed either! 👏🏻👏🏻
WHAT YOU NEED for WELLINGTONS (makes 1 salmon & 2 chickens - adjust recipe as needed for what you like!)
▫️1/4 lb wild salmon
▫️1 chicken breast (cut in half - the short way)
▫️1 tbsp gotham greens pesto
▫️1 roasted red pepper
▫️2 cups of spinach
▫️1 tsp fresh garlic
▫️2 tbsp olive oil
▫️salt pepper to taste
▫️1 tbsp arrowroot powder
▫️1/2 tsp garlic powder
▫️1/4 tsp salt & pepper
▫️béarnaise sauce package
▫️Pillsbury crescent dough sheet (1 package covers about 3 wellingtons)

WHAT YOU NEED for TWICE BAKED POTATOES (make 4):
▫️2 potatoes (pre baked *see note below)
▫️1 tbsp butter
▫️1/4 cup sour cream
▫️2 tbsp milk (add more if too thick)
▫️1/4 cup shredded parmesan + more for on top
▫️2 tsp garlic powder
▫️1/2 tsp salt & pepper

WHAT YOU NEED for GREEN BEANS:
▫️1 package of green beans
▫️1 tbsp olive oil
▫️1 tbsp fresh garlic, minced
▫️1 tsp garlic powder
▫️1/2 tsp salt & pepper
HOW TO MAKE WELLINGTONS:
Preheat the oven to 350 degrees & line a baking sheet with parchment paper.
FOR THE CHICKEN: In a small bowl mix together arrowroot flour, garlic powder, salt & pepper. Toss you two pieces of chicken in the mixture to fully coat.
In a medium saute pan warm 1 tbsp olive oil. Pan sear the chicken for about 3-4 minutes on each side. Remove from pan and place on a baking sheet and bake for 15 minutes. (NOTE: It’s ok if the chicken is not fully cooked because it is going to go back in the oven after we wrap it in the pastry puff).
FOR THE SALMON: Spread pesto on top of salmon and place in a glass baking dish. Bake for 15 minutes at 350. (NOTE: It’s ok if the salmon is not fully cooked because it is going to go back in the oven after we wrap it in the pastry puff).
While the protein is cooking, heat your remaining 1 tbsp of olive oil in a sauté pan. Add 1 tbsp fresh garlic and let simmer. Add in your spinach, salt & pepper to taste. Once cooked set aside.
Next lay out our present dough on a clean surface. Using a butter knife, cut in three even pieces. You are going to be wrapping everything inside of the dough, so make sure it’s as square as possible. You can you a roller if needed!
Once proteins are done cooking place in the center of your pastry dough. Layer with a slice of roasted red pepper, spinach, & goat cheese. Grab each end of the pastry dough and pull to the opposite side, tucking it into the bottom. Repeat this step for each corner. Place on a baking sheet and bake for 30-35 minutes, or until pastry is golden brown.
HOW TO MAKE THE TWICE BAKED POTATOES:
*BEFORE YOU DO ANYTHING FOR THIS RECIPE MAKE SURE YOU HAVE BAKED YOUR POTATOES. This is the part that takes the longest, so it’s important to do this step first. Wrap your potatoes in aluminum foil and bake at 400 degrees for about 45 minutes. Remove from oven and set aside.
Once your potatoes are baked, slice vertically down the middle. Use a spoon to scoop out the inside of the potatoes and place in a large bowl. Don’t go all the way to the skin. You want to create a supportive shell. Make sure to leave about 1/2 inch of potato on the skin.
Add milk, sour cream, butter, parmesan, garlic powder, salt & pepper to bowl. Use either a fork to mash, or whip with a hand held mixer.
Using a spoon, stuff the potato shells with the mashed potatoes. Sprinkle more parmesan on top and bake for 30-35 minutes at 350 degrees. NOTE: I bake these at the same time I bake the wellingtons!
HOW TO MAKE THE GREEN BEANS:
In a 9x12 glass baking dish mix together green beans, garlic, garlic powder, salt, pepper, & olive oil. Toss until green beans are fully coated. Bake for 30-35 minutes at 350 degrees. NOTE: I bake these at the same time I bake the wellingtons!
**While everything is in the oven make your béarnaise sauce by following the directions on the back of the package. Once everything is cooked, drizzle béarnaise sauce on top and ENJOY!
