Say it with me, “SALMON PESTO BURGERS” – heck yes!! I’m already drooling, how is that possible?!
The sun is finally starting to come out and stay out! Ugh, finally! Between Co-vid quarantine and all the rain that came pouring down in New England this spring, we need, no we deserve some sunshine! I can feel that summer is right around the corner and here to stay, which means burger season baby! So, grab your grill, grab your spatula, grab your hot dogs, it’s GO-TIME!!
Although I didn’t technically make this on the grill, it still gives me that same grill vibe! Plus, it makes lunch a little more exciting! This salmon burger is made from leftover salmon, so that means it’s very quick, super easy, and so so good! I feel like I say that in almost every post, but I can’t help it! I just love everything!
Next time you make salmon for dinner, make a little extra so you can save it to make these burgers the next day for lunch. All you need are a few of my favorite ingredients and you’re good to go! I love having this in between two slices of Ezekiel bread to give me that burger feel, but feel free to top it on top of a salad. Just as good! I promise you won’t regret it! Not even a single bite ;)
What You’ll Need for burger patty:
about ¼ lb. wild salmon, cooked
½ tbsp. Primal Kitchen avocado oil mayo
1 tbsp. pesto
1 tbsp. red onion, chopped
dash black pepper
1 tbsp. olive oil
What You’ll Need for toppings:
1 tbsp. honey goat cheese
2 slices Ezekiel Bread
handful of mixed greens
1 tbsp. Primal Kitchen avocado oil mayo
½ tbsp. pesto
Directions:
In a small bowl, combine salmon, mayo, pesto, onion and pepper. Mix well with a fork to break up the salmon filet. Using your hands, form the mixture into a burger shape.
In a medium sauté pan, warm your olive oil. Once warm, drop your burger patty in the pan. Cook for about 2 minutes on each side.
Toast two slices of Ezekiel bread. While toasting, mix together mayo and pesto to make a pesto mayo for the drizzle. Place lettuce on bread, then burger then crumbled goat cheese. Drizzle the top with pesto mayo and ENJOY!
