On nights that I can’t think of what to cook for dinner my first go-to is always mexican food 💯 Hands down all the most delicious flavors IMO. Don’t you agree?! It’s just the best! 😋 so here it is✨SPICY CHICKEN TACO QUESADILLAS✨Tacos, nachos, tostados, quesadillas, I’m really here for it all! Usually my go-to is a buffalo chicken quesadilla, but last night we went for the traditional spicy taco flavor and I was pleasantly surprised! 🤩 I didn’t miss my buffalo quesadilla at all! (we’ll see how long that feeling lasts….)
Quesadillas are also a big hit in our house because they are so easy! Especially on Friday nights after a long work week, we are always looking for something quick and easy (I know most of you can relate 😜), but i am never willing to compromise on flavor bc i just love to eat way too much‼️& this is the perfect go-to for quick but also delish & still pretty healthy meal!
Que-so, let’s taco about how to make these! (ugh I’m so cheesy 🤣) OK that joke needs to die but it just never gets old to me!!
WHAT YOU NEED:
▫️2 siete tortillas (almond flour is my favorite but the cassava and chickpea will work too!)
▫️meat of choice - for this recipe we used two small organic chicken breasts and marinated them in an organic spicy taco seasoning package
▫️cheese of choice - I use either manchengo, goat cheddar, or goat mozzarella (I like to use goat or sheep based cheeses bc they are easier on your digestive system and filled with lots of extra vitamins)
▫️red onion, chopped
▫️cherry tomatos, chopped
▫️guacamole
▫️sour cream (we use kite hill plain almond milk yogurt - you would never know the difference)
▫️salsa

HOW TO - Cook your chicken or meat of choice before doing anything. Once meat is cooked, make sure it is cut into small pieces to place inside your quesadilla. First, sprinkle a handful of cheese on the first tortilla. Make sure its enough cheese to cover the bottom of the tortilla. Then layer with your meat, red onion, cherry tomatoes, and then more cheese to cover all the fillings before covering with the second tortilla. NOTE: Make sure there is cheese on both sides in order to help the quesadilla stick together! Heat about 1/2-1tbsp olive oil in a sauce pan over medium heat. Once warm, place your quesadilla in the pan and place a small plate on top to add pressure. Let cook for about 3-5 minutes before flipping to the other side. Let cook for another 3-5 minutes (or until both sides are golden brown). Enjoy with all your favorite dipping sides!😘
