SPICY STICKY SESAME CHICKEN FINGERS - ohhhh I could actually eat these every singe day! Actually, so could Will. Def on his Top 5 list! Every time I ask him if he as any recs for dinner these are always his first answer! They truly are the perfect combo of sweet n spicy 💯 and pair so well with my favorite coconut lime rice & toasted sesame brussel sprouts!
On top of all that deliciousness, these chicken fingers are gluten free, dairy free, nut free, and make healthy eating taste not so healthy 🙃 Chicken fingers always make me feel like a little kid again! There is something so homey and comforting about them! I love them with the coconut lime rice, but I also love enjoying them as is, or dipped in one of my favorite dipping sauces! There really is no wrong answer!
What You Need for CHICKEN: ✨1 package organic chicken tenders
✨1/3 cup oat flour
✨1 cup gluten free bread crumbs
✨1 egg
✨1 tbsp pure maple syrup
✨1/2 tsp sriracha
✨1/2 tbsp coconut aminos

What You Need for SAUCE:
✨3 tbsp pure maple syrup
✨2 tbsp coconut aminos
✨2 tsp sriracha
✨1/4 tsp crushed red pepper
✨1/4 tsp black pepper
✨1/2 tsp sesame seeds
✨1 tsp garlic powder

What Your Need for BRUSSEL SPROUTS:
✨1 lb organic brussel sprouts
✨1 tbsp toasted sesame oil
✨1 tsp coconut aminos
✨1/4 tsp crushed red pepper
✨1/2 tsp garlic powder

What You Need for RICE:
✨1 can full fat coconut milk
✨1 & 2/3 cup jasmine rice
✨1 fresh lime
✨garlic powder, salt & pepper to taste

HOW TO make CHICKEN & SAUCE:
Preheat oven to 425 degrees if not using an air fryer. If you have an air fryer, I recommend using it for this recipe! Next, take out 3 small bowls. Put the oat flour in one bowl, the bread crumbs in another, and then whisk the egg, syrup, sriracha & aminos in the third bowl. Next, roll each chicken finger first in flour, then dip in egg mixture, and then coat in the bread crumbs last. Bake for 20 mins at 425 in either oven or air fryer.
While the chicken is cooking, which together all ingredients for sauce and set aside. Once the chicken is fully cooked, toss chicken fingers in sauce before serving.

HOW TO make BRUSSELS & RICE:
Preheat oven to 425 degrees if not already using for chicken, and line a baking sheet with parchment paper. Wash brussel sprouts and cut in halves. Toss in oil, aminos, crushed red pepper, and garlic powder and bake for about 20-25 mins.
While the brussels & chicken are cooking, it’s time to make the rice. To make rice, follow instructions on the back of the rice box. However, replace the boiling water with coconut milk, and add 1/2 squeezed lime. Once cooked, add garlic powder, salt & pepper to taste if desired.
