Spicy Taco Salad

Whoever came up with ‘Taco 🌮 Tuesday’, I want to be friends with. I just feel like we would vibe for obvious reasons 💁🏼‍♀️ & I also have a feeling they might like my ✨SPICY TACO SALAD✨Although it’s no traditional taco, it is insanely satisfying 😍 The crunch factor between the fresh romaine, veggies, & seite lime chips on top is 💯 then topped with warm spicy beef & dressed in the seite cashew queso 🧀, this one is a game changer!

Make it on a taco Tuesday, make it on a Monday, Wed., Thurs. Fri., whatever day, but do yourself a favor & make it 🙃 We don’t want to stop eating this one lately! It’s gluten free, dairy free, but definitely NOT flavor free 🤤Taco salads 🥗 can usually be filled with a ton of unhealthy add ons ❌, but this one is an unforgettable healthy choice❗️

WHAT YOU NEED (makes 4-5 servings)

▫️1 lb. grass fed beef or turkey

▫️1 small onion, chopped

▫️1 clove garlic, chopped

▫️1 tbsp avocado oil

▫️1 package seite spicy taco seasoning

▫️3 hearts organic romaine, chopped

▫️1/2 cucumber, chopped

▫️1/2 red onion, sliced

▫️1/3 cup cherry tomatoes, chopped

▫️1 can organic unsalted corn, drained

▫️1 cup Seite spicy blanco cashew queso (for 4-5 servings - cut in half as necessary)

▫️TOPPINGS: Seite lime chips & Seite habanero hot sauce (or your fav)

HOW TO:

  1. In a medium saute pan warm avocado oil. Once warm, add garlic & white onion and let cook for 5 minutes. Add in beef and let cook for about 10 minutes. Use a spatula to break it up. Once cooked, follow instructions on the back of seasoning package (add seasoning to 1/3 cup of water). Add mixture to cooked meat and mix.

  2. While meat is cooking, add romaine, cucumber, tomatoes, red onion, and corn to a large bowl. Next mix in your seite cashew queso using a pair of tongs or two large spoons (this is the dressing - so good!). NOTE: Only dress the amount of salad you plan to eat/serve. If you’re like me & need 2 servings tonight & two tomorrow, save half the salad mixture & dress when ready to use!

  3. Top salad with ground beef, crunched up chips & your favorite hot sauce & enjoy!
