✨THAI CHICKEN NACHOS✨this recipe has my heart ❤️ it’s such an untraditional way to enjoy a plate of nachos, but this is the nacho recipe you never knew you needed 🥰 there used to be a restaurant not too far from where i live that served thai nachos and they were such a huge hit with my fam! i think they still do honestly, but i’ve barley been out to dinner since Covid 🤷🏼♀️😂 so i haven’t had these in what feels like years - so i clearly had to make my own version! my mom, sister, and I still talk about them to this day. this is definitely where the inspo for this recipe comes from!
my version is gluten free, dairy free, paleo, and drool worthy if you ask me 🙃 make these for an app with friends, or dinner for two. you could even serve this over rice! i’ve taken leftovers of the sauce and enjoyed over rice the next day and it is just as good!
WHAT YOU NEED:
▫️ 1 can full fat coconut milk
▫️ 3 tbsp red curry paste
▫️ 2 tbsp coconut aminos
▫️ 1/2 white onion, diced
▫️ 1 red bell pepper, sliced
▫️ 2 tsp garlic powder
▫️ 1 tsp black pepper
▫️ 1 tbsp tapioca flour + 1 tbsp water (mixed)
▫️ 1 lb organic chicken tenders, cooked
▫️ 1 bag tortilla chips (Lundberg Sea Salt Rice Chips are my favorite)
▫️ cilantro (optional)
HOW TO:
Preheat oven to 350 degrees and bake chicken tenders for 30 minutes (if you don’t have already have cooked chicken). I toss the chicken tenders in olive oil, garlic, salt & pepper to taste before cooking. Once cooked, cut into small pieces and set aside.
In a medium saucepan over medium/high heat, bring the coconut milk, red curry, coconut aminos, diced onion, sliced peppers, garlic powder, and pepper to a boil, then reduce to a simmer, stirring occasionally. Let simmer for about 15 minutes. Add in the tapioca flour + water mixture (helps thicken it slightly) and your chicken. Continue to occasionally stir and let simmer for about another 5 minutes. Remove from heat and let sauce sit for about 5 minutes.
While it sits, layer your chips in a large bowl. Pour 1/2 of your sauce over chips, layer with more chips, then pour remaining sauce on top.***NOTE: DO NOT use Siete chips for this recipe unless you dip the chips into the Thai Sauce as a “dip”. If you pour the sauce over them, the will get super soggy and no one likes that! This is also amazing over rice! Just another way to enjoy it if you want!
