Toasted Cheese & Avocado Melt

When I was little my Dad used to make my sister and I what he would call a “toast & cheese” 🍞 🧀 This toast & cheese was literally just toasted bread with melted cheese 😂 his specialty! & for some reason it was always a huge hit with us! 👯‍♀️ Simplicity at it’s finest 🙌🏻 I hadn’t really expanded my taste buds at that time in my life - clearly 🤷🏼‍♀️ This open faced lunch is what I like to call a ✨TOASTED CHEESE & AVOCADO MELT✨ dedicated to the traditional toast & cheese but kicked up a notch! You can add tunafish loaded with veggies or my personal favorite - buffalo chicken salad! Either way this is sure to melt in your mouth and give you that feel good, homey feeling! 🙃

What You Need:

- 1/2 cup of your choice of protein (buffalo (or plain) chicken salad or tunafish) I LOVE to load mine with chopped celery, onion, carrots, and mix it with a little avocado oil mayo, garlic powder, salt and pepper to taste! Or use leftover chicken and toss with veggies, Mayo & Franks red hot!

- 2 slices of Ezekial bread (or your favor GF bread)

- 2 slices of your favorite cheese (I use a Cheddar Goat Cheese and cut thin slices)

- 1/2 avocado

HOW TO: Lightly toast your bread 🍞 Spread mashed avocado 🥑 on each slice. Top with your protein 🍗 and layer with your choice of cheese. Broil on high for about 3 mins (make sure to watch it so it doesn’t burn! - every oven is different!) Enjoy with a little side salad 🥗 or a few of your favorite chips! Lunchtime made quick & easy! 🥰😋🔥
