Let’s talk side dishes real quick! 🍽 Your favorite part of the plate or no??🍴🥄Personally, I love some good side dishes! I think they make the entree most of time! But I can also see where people get sick of them because it’s easy to fall into the habit of whipping up the same veggies 🌽 and starch 🥔 every night. Lately I feel like I’m not craving anything dinner wise! I’m just kind of sick of everything - does that happen to you?! But, one thing I’m not sick of right now is my ✨TWICE BAKED SWEET POTATOES✨ um-yum 👏🏻🍠 These are so easy and still healthy but also a little different and will help spice things up in your kitchen! Do you feel like you need a change lately too?!
What You’ll Need:
(makes 2-4 servings)
* 2 medium/large sweet potatoes
* 1 tbsp grass fed butter
* 1 tbsp coconut sugar
* 1-2 tbsp unsweetened almond milk
* 1/4 tsp cinnamon (or more if desired)
* 1/4 tsp ground turmeric (optional)
* 1/2 tsp garlic powder
* salt & pepper to taste
🍠
HOW TO:
1. Preheat oven to 400 degrees. Using a fork, stab inserts into your potatoes to release the air pockets. Wrap in tin foil and place in the oven for 45 minutes to an hour.
2. Once cooked, remove from oven and slice vertically down the center of the potato.
3. Using a spoon, remove the center of the potatoes and place into a small bowl. Mash the potatoes with the remaining ingredients and then place back into the potato skins.
4. Shave your favorite cheese on top (I used a goat mozzarella) and bake at 350 for about 15 minutes and then broil for 2 minutes for that extra golden brown on top! ENJOY! 🍠 😋
