Vanilla Cashew Milk Ice Cream

I scream you scream we all scream exxxxtra loud for ✨HOMEMADE VANILLA CASHEW MILK ICE CREAM

Ok, so you guys know how much I love my so delicious very vanilla cashew milk ice cream. I talk about it all the time! Honestly, it’s the best! I love it so much that I had to find a way to make my own version and I think I did it!

Just like my favorite so delicious, the base of this ice cream is made from cashews! I love a cashew milk base because it creates such a rich and creamy texture which I feel is V important when talking about ice cream. Don’t you agree?!

This ice cream is made with only 5 ingredients 🤯 is gluten free, dairy free, refined sugar free & is totally guilt free IMO. You do need an ice cream maker for this recipe but believe it or not I got a mini one from Crate & Barrel for $19.99‼️ money well spent if you ask me!

WHAT YOU NEED

(makes about 2-3 servings)

◽️1 cup raw organic cashews

◽️1 cup unfiltered water

◽️1/4 cup pure maple syrup

◽️1 can (5.4oz) coconut cream

◽️1 tsp. vanilla

◽️1/4 tsp. Himalayan pink salt

HOW TO👇🏼

◽️Soak cashews in unfiltered water overnight (at least 8 hours). Once soaked, drain cashews. In a blender combine cashews, maple syrup, coconut cream, and vanilla. You may need to add 1-2 tbsp of water if too thick. Once smooth (liquid like consistency) poor into a freezer safe bag and place in freezer for about 2 hours (don’t let it freeze completely! you just want it chilled) Next, follow instructions on your ice cream maker. Serve with whatever toppings you so choose! I’m clearly on a PB & chocolate kick lately! Enjoy!!
