weekend to-do list: make ✨ZUCCHINI CHOCOLATE CHIP BREAD✨ done ✔️ i loooove 🤍 zucchini bread for two main reasons. one being that it’s main ingredient is a veggie yet you’d never know, and two being that it is easily interchangeable for breakfast and/or dessert. this bread almost reminds me of a blondie if you warm it up and throw a little ice cream on top 💯 if a breakfast or a snack resembles dessert in any way, it’s a win from me!
this loaf is gluten free, dairy free, refined sugar free, and made from all the good stuff as always. so obviously it’s a no-brainer. i hope this loaf sweetens up your weekend! you deserve it 😘 xoxo
WHAT YOU NEED:
(makes 1 loaf)
dry ingredients:
+ 1 cup almond flour
+ 1 cup oat flour
+ 2 tsp baking powder
+ 1/4 tsp pink salt
+ 1 cup dark chocolate gems
wet ingredients:
+ 2 eggs
+ 1/2 cup creamy almond butter
+ 1/2 cup coconut sugar
+ 1 1/2 tsp vanilla
+ 1/4 cup almond milk
+ 2 small zucchinis, or 1 large, shredded
+ 1 tbsp apple cider vinegar
HOW TO:
Preheat the oven to 350 degrees and either line a bread pan with parchment paper or grease with oil or butter.
In a small bowl, mix together dry ingredients.
In a large bowl, whisk together all wet ingredients. Gradually pour dry ingredients into wet ingredients and mix until fully combined. Fold in chocolate chips.
Pour batter into bread pan. Top with a few extra chocolate gems and bake for 45-50 minutes. ENJOY!
